The Dai Dai (Japanese Bitter Orange) is the member of the citrus family that best understands the art of waiting.

Even when its fruit ripens and turns yellow, it does not easily fall. Remarkably, come summer, it can turn from orange back to green, returning to a youthful appearance. On a single tree, one can often see last year's old fruit sitting side-by-side with this year's new growth, gazing out at the scenery together.

In Japanese culture, this symbolises "generations" (dai dai), representing family prosperity. Viewed from another angle, it is a profound expression of love for life.

It gently reminds us that everything brand new is actually grown upon old foundations.

Those who have been by your side for a long time, those habits you have maintained, and the experience accumulated from the past—these are the strengths that support you to go further. We needn't be in such a rush to discard the past; sometimes, keeping these things steadily by our side is the most grounded form of happiness.

The scent of the Dai Dai belongs to the Petitgrain family. It lacks the simple innocence of the sweet orange; instead, it carries a hint of bitterness and a deep, resonant tartness, followed by a refreshing, sweet finish.
