幾百年來,世界各地的甜橙樹,底下的根都不是甜橙的,是苦橙的。

苦橙的果實太酸太苦,幾乎沒有人會直接吃。它的根卻是另一回事。耐旱,耐得住貧瘠和帶石灰的土,也不容易生病。所以果農的做法是,把甜橙的枝接在苦橙的根上。一棵樹上,甜的枝葉和苦的根同時活著,各自做各自的事。

我們對自己苦的那部分,通常只有一個處理方式,就是想辦法刪去或改掉它,然後當它不存在。彷彿手上有一把刀,可以把不喜歡的那截切走。

可是嫁接不是這樣運作的。果農也用刀,但那一刀落在甜橙的枝上,不在苦橙的根上。苦橙的根一直沒有變甜,它只是繼續做根,繼續在別的樹活不了的土裡站著。

果皮冷壓出來的氣味,帶著一層苦澀,像咬到果皮內側那層白色的絡,尾段沉下來,落在有點苦的木質味上。

或許我們一直想刪去的,從來不是等著被修正的東西,而是讓我們繼續走下去的本錢。

What you want to cut away is holding you up.

For several centuries, most sweet orange trees in the world stood on roots that were not their own. The roots belonged to the bitter orange.

Nobody eats its fruit. It is too sour, too sharp, and in Seville the oranges ripen, fall, and lie on the pavement untouched. Underground, though, that same tree is doing something no sweet orange could manage: holding on through drought, through chalky ground, through diseases that kill its gentler relatives. So growers learned to take a sweet branch and join it to a bitter root.

We deal with the bitter parts of ourselves in one way only. We look for a way to delete them, to correct them, to carry on as though they had never been there. There is a knife in the hand, and a piece of ourselves we would happily cut off.

Grafting is not that. The knife is real, but it falls on the sweet branch, never on the bitter root. The root is left exactly as it is, still bitter, still doing the one thing it was always good at.

Cold-pressed from the peel, the oil carries that bitterness through. The first impression is the astringency of the white pith, and it settles low, into something dry and faintly bitter at the end.

What we keep trying to delete may never have been the flaw. It may be the capital we are still living on.
